To hide sections of a Foswiki topic, use HTML comments.

Example comment within a sentence:

Visible <!--- and hidden --→ text

Example spanning multiple lines: 
<!--
   * Useful to hide settings:
      * Set EXAMPLE = This is hidden
-->
